Smoky vegan jackfruit bean burgers

Long gone are the days when a meat-free barbecue consisted of some burnt veggies and sad-looking quorn sausages.

These smoky bbq jackfruit bean burgers held together really well and tasted divine! In the colder months you could easily fry, grill or oven bake rather than barbecue.

We served ours straight off the bbq with some tasty slaw and a fresh green salad. Enjoy!

Ingredients

  • 1 medium carrot, grated
  • 1 medium courgette, grated
  • Half red onion, finely diced
  • 2 garlic cloves, crushed
  • Half tin/packet refried beans (~200g)
  • 2 cups cooked beans of choice (we used butterbeans)
  • 1 200g pack Uptons bbq jackfruit
  • 100g porridge oats
  • 3 tbsp tahini
  • 1 tsp Chipotle chili flakes (optional)
  • 1 tsp smoked paprika (optional)

Method

Fry the onion in a tbsp oil for about 5 minutes. Add the garlic, fry for about a minute. Add the jackfruit, fry for 3-4 mins. Add the veggies and spices, if using, and continue frying for a further 6-8 mins, until everything is cooked.

Meanwhile, crush the beans with a potato masher or blitz in a food processor. Season well and add the tahini, refried beans and porridge oats. Mix well.

Once the veggie jackfruit mix is cooked, add to the rest of the ingredients and mix well. Wait until it is cool enough to handle, then wet your hands and form into patties. You should have enough for about 8 generous burgers.

Refrigerate for at least 30 minutes (you could prep these the morning or night before) . Cook on a bbq for about 5 minutes on each side, or alternatively fry in a little oil for the same amount of time. You could also oven bake for 30 mins on baking parchment for a lighter option.
